The Bear, or Owsley Stanley, is not only a former underground LSD chemist and soundman for the Grateful Dead, but perhaps one of the most controversial carnivores out there, judging by the storm he caused over at the Active Low-Carber Forums. At age 71, he has eaten nothing whatsoever from any vegetable sources other than spices for forty-seven years. He believes the natural human diet is completely carnivorous. But what you find here today is an amazing recipe he shared. The spice mix is not too important, and you can throw in whatever combination you like, but the cream cheese mixed with the butter makes for the juiciest roast chicken I've ever tasted. If you have a spit and can slow roast the chicken, even better.
Ingredients:
1 fresh whole roasting chicken
½ package (4oz) cream cheese, softened to room temperature
1 stick unsalted butter, slightly softened
1 tablespoon ground cumin
1 tablespoon ground coriander
2 tablespoons curry powder
Method:
Preheat oven to 450°F. Line roasting tin with aluminum foil.
In an electric mixer or blender, combine cream cheese, butter and spices. Beat to form a smooth spice paste.
Separate the skin from the chicken with your hand, and push spice
mixture between the skin and the flesh of the chicken. This gets messy!
Use a spoon to reach awkward spots like the thighs or sides of chicken.
Spread remaining spice mixture over the surface of the chicken skin.
Place chicken in the roasting tin, leaving uncovered. Let chicken roast
for 15-20mins, then turn down the oven temperature to 350°F. for the
rest of the cooking time.
The length of REMAINING cooking time (after first 15-20mins) will depend on the size of your bird:
2½ -3 lbs ---------> 1 hour
3-4 lbs ---------> 1 ½ hours
4-6 lbs ---------> 1 ¾ hours


Yuummm! This looks good. I did a "beer can" chicken last night and vowed never to do that technique again. I might try this recipe with a grilled spatchcocked chicken (back bone cut out, chicken is laid flat on rack/pan or grill).
While I don't ever think I'd cut out all vegetables because I like so many and it would be hard to "fit in" in so many social situations, I find the "no plant" diets intriguing. And I have found some benefit (and no downside) to reducing plant intake and increasing meat in the last few years compare to my low meat consumption years. So I'm sure that an all meat diet isn't necessarily "bad" or harmful, as most people would think. Probably much better than a vegan diet.

Just wanted to let you know that I tried a variation of this recipe yesterday and loved it. My wife's not a big fan of curry so I made my own spice mixture of garlic, basil, thyme, and rosemary. Loved it. It was the juiciest, moisted roasted chicken that I have eaten in a long time. Thanks for sharing the recipe with us!

This chicken looks delicious! Thanks for all of these yummy recipes. I've been doing well at losing weight and keeping my blood sugar happy after I switched over to multiple protein rich meals and low carbs throughout the day. Losing the carbs really has helped my energy levels and weight loss, so you're onto something with your cool blog!
What are your thoughts about Alli? Have you heard any bad/good comments on it yet?
I've been using it for about three weeks in combination with my usual diet and fitness plan, and I noticed that it did allow me to lose extra weight - and it seems the fat is gone, not the lean muscle mass. But it's still early in the game yet.
I'll be interested to see how people do with Alli. So far it seems to hold a certain amount of promise, especially for the morbidly obsese who are tired of looking forward to losing just one pound a week. As far as my use of it goes, so far, so good!

I'm glad you're seeing success with Alli! Personally, the reports about the side effects completely turned me off (uncontrollable oily discharge?!) but I will defer to Dr. Micheal Eades on the scientific concerns to do with this drug: http://www.proteinpower.com/drmike/?p=518
I'm not much for diet pills myself, just because I'm suspicious and I don't want to pay for the weight loss in unexpected ways down the road.
I'm glad you're doing so well though, and please let me know how it goes! I hear you 100% on wanting more than 1-2lbs gone a week...that's why I went carnivorous in the first place. Glad you enjoyed the blog.
